The history of wedding cakes dates back centuries, with roots in ancient Rome and Medieval Europe, and has changed over time. In Roman times, a wheat or barley cake was broken over the bride’s head as a symbol of fertility and prosperity. The newlyweds would eat the crumbs together to unify themselves as a married couple. Guests would gather around to collect the crumbs, believing they brought good luck. By the medieval period, barley bread was switched to spiced bunds, cookies, and scones which were stacked as high as they could. The couple would then have to attempt to kiss over the tower of sweets, and if they were successful, it meant good fortune was upon them. Eventually, this custom changed to the bride and groom cutting a stack of spiced buns to symbolize their unity. Over time, the practice evolved into the tiered cakes we know today, with each tier symbolizing prosperity and fertility. Wedding cakes were not originally white, rather colorful, but this changed in the early 20th century when Queen Victoria had a white cake for her wedding. As wedding cakes became more elaborate, so did the customs surrounding them, leading to the ornate creations we see at weddings today.

In recent years, the world of wedding cakes has been a resurgence of innovation and creativity. Modern couples expanding the boundaries of tradition, opting for cakes that reflect their unique personalities and tastes. Flavors have also been pushing boundaries, with couples choosing decadent combinations like salted caramel, marble (chocolate and vanilla mix), and exotic fruit medleys. In recent years, floral inspired cakes have taken a rise in popularity, with intricate sugar flowers decorating everything from traditional tiered cakes to modern sculptural designs. Another popular design is the naked cake. Naked cakes have a rustic and minimalistic look with the cake layers exposed on the outside and very little frosting on the outside. These cakes are often paired with fresh flowers, fruit, or other natural decorations. Drip cakes feature drips of the bride and groom’s favorite sauce cascading down the sides of the cake, creating a dramatic effect. They also can be decorated with various toppings like berries, candies, or edible and nonedible flowers. Another trend that has been popular is the use of other desserts instead of cakes. Some couples don’t like cake, so they find an alternative dessert, whether it is pie, donuts, etc., to still have something sweet for their guests to enjoy. No matter how the cake is designed, it reflects the couple’s love story, and these personalized elements make each wedding cake truly unique.
